This is a really fantastic meal. A classic for this time of year. Loads of amazing different cuts of meat, each with its own sauce, slowly boiled. A very significant and important dish, and best served in a supperclub format rather than a restaurant as it can be made and then eaten straight away. I'll make a few other delicious things either side of the bollito.

COCONUTS AND CURRY LEAVES
I love Keralan food. After good few visits and quite a few lessons i feel i have got a good handle on it. I love to eat something exotic and interesing before we are force fed loads of roast dinners.
As always with my cooking i try not to buy too much produce from too far away. There are always some substitutions but the spirit of the meal, and indeed the coconuts and curry leaves will be Southern Indian. CASTELVETRO
Castelvetro wrote a book in the 1600's called The fruit herbs and vegetables of Italy. Castelvetro was a fugitive who escaped to live in England and was horrified by the food. He wrote an excellent and valuable account of how to grow and cook the things he missed from back home.

I have always wanted to go to Kashmir, every time I am in India I get told it is too dangerous.
However I have a few great books and feel I have been to the North of india enough to imagine. PROVENCE
I think its great to be cooking provencal food in the autumn, we all think of tomatoes and green beans when we think of povence but actually much of the delicious food in the south of france is to be found in the autumn. Bulbs of fennel, wild mushrooms and delicious farmed rabbits are on the menu. I have a few red mullet for those not excited about the rabbit.
I have a great cook book recently given to me called At Lulus Table, its by Richard Olney and is all about the cooking of Lulu in Domaine Tempier in Bandol (an excellent wine you can by in Lea and Sandemans). I'll be cooking from this book amongst others and I'm sure it'll be a warming Autumnal feast.

THURSDAY NIGHT AT THE DOCKS
This Thursday at The Dock Kitchen we will be holding another supper club. We're not exactly sure what well be cooking but there are loads of delicious english porcini around and it would be a shame not to cook with them. If we had a little more time we would be out picking them ourselves, unfortunately we are very busy so our connections in the Polish Mushroom Picking Community will hopefully not let us down (though they do cost a pretty penny).
The sea bass is good enough for raw and the grouse is still tasting excellent, I've just bought a big box of violini squash from the market in milan so I imagine they'll probably make an appearance too.
As always these meals are set, we do have some flexibility but only really with advance notice.
